Ingredients
  • 1 1/2 cup sweet potatoes, drained and diced (steamed or precooked and cooled)
  • 1/4 cup 1 cup carrots, drained and chopped (steamed or precooked and cooled)
  • 1 cup vegetable broth (1 tsp Better Than Bouillon Seasoned Vegetable Base + 1 cup water)
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 4 tablespoons nutritional yeast (nooch)
  • 1/2 cup 1/2 prepared PB2 cashew powder
  • 1 tablespoon lemon juice
  • 1 tablespoon splenda (or sweetener of your choice)
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon cajun powder
  • Optional Ingredients:
  • 1 Rotel diced tomatoes and green chilies (drained and added after)
  • 1/2 black beans (drained, rinsed and added after)
  • 1 Pretzels for dipping (less fat)
  • 1 Tortilla chips, for dipping (adds more fat)
Instructions
  1. Preparation
    1. Blend these Ingredients: In a blender, combine the drained and diced sweet potatoes, chopped carrots, vegetable broth, onion powder, garlic powder, salt, paprika, cajun seasoning, nutritional yeast, prepared PB2 cashew powder, lemon juice, and Splenda.

    2. Blend Until Smooth: Blend the ingredients until you achieve a smooth and creamy mixture. You may need to stop and scrape down the sides of the blender to ensure everything is well combined.  You can also add a bit of water if it seems to thick to blend.

    Topping Choices:

    • Cilantro
    • Green chili’s
    • Tomatoes
    • Black Beans
  2. Heating In Crockpot
    1. Transfer to Crockpot: Pour the blended mixture into a crockpot or slow cooker.

    2. Season and Heat: Stir in the Rotel diced tomatoes and green chilies (and the optional drained black beans if desired). Set the crockpot to low heat and allow the mixture to warm and meld the flavors. This should take about 2-3 hours.

    3. Serve Warm: Once your PB2 Vegan Cheese Rotel Dip is hot and ready, transfer it to a serving bowl.
